I feel the need to be honest with y’all. I’m scared of my Instant Pot (IP). Like, super scared. I have a constant fear that I’m going to blow something up…but my want for good food is stronger than my fear of my IP. A friend recently shared a picture of her IP shrimp boil on Facebook and I KNEW I had to try it. I loosely based my recipe off of this recipe on Scattered Thoughts of a Crafty Mom. I knew what I wanted to put in my broil, but wasn’t 100% sure on the cooking times, since I’m still learning each function of my IP.

This made enough for 5ish meals, just be prepared to eat it a lot or invite friends over!

INGREDIENTS:
1 lbs of potatoes of your choice. I used white potatoes
1 package of mushrooms
1 package of No Sugar Kielbasa Smoked Sausage
1 tbsp of minced garlic or a few cloves
2 tbsp of Old Bay seasoning
1/2 tbsp of salt
1/2 tbsp of garlic powder
1/2 tbsp of onion powder
1 tbsp of pepper
1.5 lbs shrimp (I used in the shell)
chicken broth
water

INSTRUCTIONS:
Cut the potatoes into cubes and add into IP with 2 cups of chicken broth, 1 tbsp of old bay and a dash of salt. Cover the IP and cook for 3 minutes (more if you want your potatoes really well done) on the beans/chili setting with high pressure.
While that’s cooking, cut the sausage into slices and take stems off the mushrooms.
Once done, release the pressure and add in sausage, mushrooms, shrimp, all the seasonings and 1 cup of water. I stirred mine around a little bit so the seasonings weren’t clumped on top.
Cover the IP and cook for 4 minutes on the beans/chili setting with high pressure.
Once done, release the pressure and enjoy! I use a straining ladle to fill my bowl.
